Cow's cheese with spun dough, whole and raw milk from cows mainly grazing. Thin and smooth crust of yellow color; white to yellow straw-colored, compact, elastic and hard cheese in the most seasoned forms; sweet taste in young forms, tending to spicy in the more seasoned ones. Inedible crust.
